Recipe 6: Oyster mushroom morning stir fry

Here goes another mushroom based breakfast recipe. Reasonably priced package of localy grown fresh oyster muhsroom (pleurotus) got my attention as I am aware of its immunity improving capabilites. However, I am wondering in which way this mushroom alter it, because boosting it is probably not what one with AI issues is looking for. Maybe it just helps to normalize the immunity regulation somehow. If you know any good resources on this topic, please share in comments.

Ingredients

  • 250 g of fresh oyster mushroom (prefer local)
  • 1 tsp. olive oil
  • 10 g of butter
  • freshly ground pepper
  • pinch of parsley
  • pinch of cumin
  • pinch of salt

Howto

Wash the mushrooms and fry it with the olive oil in low to medium heat. During the process, mushrooms will release almost incredible amount of water, but do not worry, it will evaporate soon. Wait until mushrooms get gold color, which should take something about 10 to 15 minutes. Then add butter and also all the spices and increase heat for a few minutes. Make sure the mushrooms are properly done, I like them bit on a crispy side.
