For the occasion of my dad's birthday, I have decided to bake some cake. With the extensive assistance of my girlfriend, I gave a birth to very chocolatey one. And moreover, it is completely flour free and also refined sugar free. If you ask how does 300 g of chocolate fits into paleo diet, let's be honest - it does not. Even though that it is dark chocolate without much added sugar. But common, it's birthday celebration. I have seen original recipe on the nice czech blog paleolifestyle.cz operated by Sugarfreelife. Cudos!
- 300 g of quality dark chocolate (>70% cacao)
- 3 bananas
- 1 avocado
- 6 eggs
- 4 tblsp. of honey
- 1 tblsp. of freshly ground coffee
- pinch of butter
Peel and cut the avocado and the bananas to small chunks and put them into large bowl. Now melt the chocolate somehow (we have used hot-water bath) and add it into bowl together with honey and coffee. Now let the whipping show begin! I would recommend to whip eggs in the separate bowl first and add them to the large later. When done, fit the mixture into baking form. We have used one with diameter somewhere around 20 centimeters. Install baking paper impregnated by the butter to the bottom of the form in order to unload cake easily later on. Bake in preheated oven at 180 °C for 30-40 minutes.
