Recipe 11: Porridge of cauliflower and buttersquash

This delicious and handy side dish recipe comes from Kája from nice blog called Paleoblog1. Its author is lady obviously way more experienced in the field of practical cooking, so I often visit her blog to let the inspiration find me. I have just noticeably increased the share of almost all major ingredients in order to ensure compliance to my concept what it takes to make two decent portions.

  • 1 medium sized butter squash
  • half of cauliflower
  • 2 onions
  • 3 cloves of garlic
  • ground cinnamon
  • ground pepper
  • pinch of parsley
  • a little ginger
  • 1 tblsp. of olive oil
  • salt

Wash, peel and dice all the vegetables to small chunks. Start to roast onion on oil for a while, in the large pan. After while, add squash dices and pour some water into pan. Let it stew under cover for about 5 minutes. After this time period, add cauliflower dices, pour a little water again and let stew for another 5 minutes.

When done, add chopped garlic, ginger and all the spices and let stew for last one minute. Then dislocate content of the pan into large pot and puree it using blender.

It is very interesting side dish, we had used it to accompany quality sausages and also trouts. Both with great success.
